Whole Wheat Muffins recipe

Temperature: 400 ° F

Ingredients

  • 3/4 cup  all-purpose flour
  • 1 cup  whole wheat flour
  • 1/4 cup  sugar
  • 4 teaspoons  baking powder
  • 1/2 teaspoons  salt
  • 1 cup  milk
  • 1 egg (extra large)
  • 1 1/4 cup  melted butter or oil

Instructions

If you like whole wheat bread, you'll enjoy these muffins. Light in texture and taste.
Preheat oven to 400 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners.
In the bowl of an electric mixer combine flour, sugar, baking powder, and salt. Add milk, egg, and butter and beat just enough to moisten the dry ingredients (start at low speed and turn to high as dry ingredients begin to get damp).
Spoon batter into muffin tins about 2/3 full.
Bake at 375 degrees for approximately 20 minutes or until a toothpick inserted into the center comes out clean and dry. Remove from oven and cool for 10 minutes before turning out of pan.
Variation:
Add 1/4 cup raisins or 1/4 cup chopped peanuts to the batter.
Yield: 12 muffins
