Ingredients
Cake Batter
- 1 cup butter softened
- 1/2 cup vegetable shortening
- 3 cups granulated sugar
- 5 eggs
- 3 cups all ourose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 tsp vanilla
- 1 tsp rum flavoring
Filling
- 1 Fresh Pineapple, diced into 1 inch cubes
- 1/2 cup brown sugar
Topping
- 1 pint whipping cream
- 1/3 cup superfine sugar
- 8oz flake fresh coconut
Instructions
Method of Preparation: 1. beat sugar, shortening and butter together until light and fluffy - about 6 minutes 2. add eggs one at a time blending after each egg 3. combine flour, baking powder and salt together and set aside 4. add vanilla and rum flavors to milk and set aside 5. gradually add flour mixture to butter/sugar/egg mixture alternately with the milk beginning and ending with the flour mixture until all combined - DO NOT OVERMIX! 6. spoon batter into prepared pan and bake at 350 - 1 hour and 15 min or until tooth pick inserted into center of cake comes our clean 7. cool cake completely 8. for filling place pineapple and brown sugar in a heavy saucepan and simmer 20 min or until pineapple becomes thick and syrupy - remove from heat and let cool completely 9. whip cream with superfine sugar and keep it cool until ready to assemble cake 10. to assemble cake - split cooled cake in middle and spoon cooled filling over bottom - replace top of cake and cover with sweetened whipped cream - sprinkle with fresh coconut
