Sweet Potato Walnut Crumble Cake recipe

Temperature: 325 ° F

Ingredients

Cake
  • 1 stick  Butter, melted
  • 1 cup Sugar
  • 2 large  Eggs
  • 1 teaspoon Vanilla
  • 1 cup Sour Cream
  • 2 medium Sweet Potatoes, cooked
  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon  Baking Soda
  • 1/2 teaspoon Cinnamon
Walnut Crumble
  • 1 cup Chopped Walnuts
  • 1/2 cup Light Brown Sugar, firmly packed
  • 1/2 cup  All Purpose Flour
  • 1/2 stick Butter, melted

Instructions

Preheat oven to 325 degrees F.
Generously butter a 9 inch springform pan.
Mash sweet potatoes in a large bowl. Add butter, sugar, eggs, vanilla, and sour cream and mix together.
In another bowl, combine flour, baking powder, baking soda, and cinnamon.
Add to potato mixture and stir to blend.
Spread evenly into buttered pan.
Combine walnuts, brown sugar, flour, and butter.
Mix with fingers until crumbly and sprinkle over batter.
Bake about 1 hour until cake tests done. Allow to cool. Loosen edges and remove sides of pan.
