Ingredients
- 1 - 21oz. can strawberry pie filling or topping
- 1 - 11oz. can mandarin oranges, drained
- 1 - 18.25 oz. Package yellow cake mix
- 1/3 cup vegetable oil
- 3 eggs
- 1 1/3 cup, plus 2 tbsp. orange juice, divided
- 2 tsp. grated orange zest, divided
- 4 oz. cream cheese, softened
- 1/4 cup butter, softened
- 1 1/2 cup confectioners' sugar
- 15 mint sprigs for garnish (optional
Instructions
Preheat oven to 350 degrees F. Brush bottom and sides of 13" x 9" springform pan with melted butter. Chill in the freezer until ready to use. Reserve 15 strawberries from pie filling (or use 15 fresh strawberries) and 15 mandarin oranges and set aside. In large mixing bowl, blend cake mix, vegetable oil, eggs and 1 1/3 cup orange juice at low speed until moistened. Add 1 tsp. orange rind. Beat at medium speed for 2 minutes. Pour the batter into prepared pan. Spoon remaining pie filling evenly over batter. Place mandarin oranges on top of filling. Bake at 350°F for 35-40 minutes or until golden brown and toothpick inserted in center comes out clean. Cool for at least 1 hour in pan. Cream together, cream cheese and butter. Add confectioners' sugar gradually with remaining 2 tbsp. orange juice and 1 tsp. orange rind. Beat until creamy. Spread over cooled cake. Mark off 15 pieces. Garnish each piece with a reserved strawberry, mandarin orange slice, and mint sprig.
