Strawberry Raisin Muffins recipe

Ingredients

  • 4 eggs
  • 1 1/2 cups  sugar
  • 2 cups  fresh strawberries, cut in half (if using unsweetened frozen, thaw, drain, and dry)
  • 1 1/2 cups  raisins
  • 1/2 cup  butter, melted
  • 3 cups  flour
  • 1/4 teaspoon  salt
  • 3/4 teaspoon  baking powder
  • 3/4 teaspoon  cinnamon

Instructions

These muffins go well with brunch or fruit salad. They have a lovely pinkish hue, from the addition of the strawberries.
Preheat oven to 350 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners.
In a bowl, combine eggs, sugar, strawberries, raisins, and butter.
Sift together flour, salt, baking powder, and cinnamon. Stir dry ingredients into strawberry mixture until just moistened; batter will be thick. Do not overmix.
Bake at 325 degrees for approximately 15 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and allow to cool in pan for 10 minutes before turning out.
Variation:
Ice with Cream Cheese Icing
Yield: 24 muffins
