Ingredients
- 4 cups unbleached flour
- 1/3 cup non-instant powdered milk (or 1 1/4 cups whole milk)
- 1/2 cup cheddar cheese, grated
- 1/4 cup black olives, chopped
- 1/2 teaspoon garlic salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne powder
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 1/4 cups water (omit if using liquid milk)
Instructions
Black olives add an interesting flavor to these muffins. They go well with a bowl of chili. Preheat oven to 375 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners. In a mixing bowl, place the first eight ingredients. Add the eggs, oil, and water to the dry mix and blend until the ingredients are just combined. Spoon batter in muffin pan cups until 2/3 full. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and let cool in pan for 10 minutes before turning out. Yield: 12 muffins
