Spiced Tropical Treat Loaf recipe

Temperature: 350 ° F

Ingredients

  • 2-1/2 cups all-purpose flour
  • 1 tablespoon  baking soda
  • 1/2 teaspoon  salt
  • 1 teaspoon  allspice
  • 1/2 teaspoon ginger
  • 1 cup granulated sugar
  • 1/2 cup melted butter or margarine
  • 1 large egg, beaten
  • 1/2 cup dried papaya, chopped
  • 1/2 cup unsalted macadamia nuts, chopped
  • 1 can (8-1/4 oz.) crushed pineapple in syrup, undrained
  • 1/2 cup  angel flake coconut
  • 1/3 cup  buttermilk
  •  Softened cream cheese, optional

Instructions

Preheat oven to 350 degrees and spray Kaiser Bakeware Extraordinaire Loaf Pan with a non-stick cooking spray.
Measure flour, baking soda, salt, allspice and ginger; set aside.
In a large mixing bowl, with electric mixer or medium speed, beat together sugar and butter or margarine; add egg and beat until smooth. Add papaya, macadamia nuts, pineapple with syrup, coconut and buttermilk; beat on medium speed of electric mixer to combine well. Add dry ingredients and beat on medium speed of mixer until well blended, scraping bowl several times.
Pour batter into prepared loaf pan and bake for 1 hour to 1 hour and 10 minutes, or until toothpick inserted in center of loaf comes out clean. Let cool in pan for 10 minutes; remove from pan to wire rack. Cool completely before slicing.
Yield: 1 loaf. Slice and serve with softened cream cheese, if desired. This loaf freezes well.
