Sour Cream Coffee Cake Muffins recipe

Ingredients

Muffins
  • 1 cup  sweet butter, room temperature (2 sticks)
  • 1 cup  granulated sugar
  • 4 eggs (extra large)
  • 1 cup  sour cream
  • 2 1/4 cups  cake flour
  • 1 Tablespoon  baking powder
  • 1 teaspoon  baking soda
  • 1/2 teaspoon  salt
Topping
  • 1/2 cup  granulated sugar
  • 1/2 cup  flour
  • 2 teaspoons  cinnamon
  • 1/4 cup  butter (1/2 stick), melted

Instructions

Served warm, these muffins make a good breakfast treat or coffee break snack.
Preheat oven to 375 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners.
In the bowl of an electric mixer, combine butter, sugar, eggs, and sour cream. Beat at high until blended and smooth. In a second mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix them together with a whisk.
Gradually combine the dry ingredients into the sour cream mixture and beat at low until ingredients are dampened. Turn to high and beat until batter is smooth. Fill each muffin cup with batter 1/2 full.
Combine sugar, flour, cinnamon, and butter for topping, and beat together lightly with a fork. The topping will look pebbly. Sprinkle a little bit of this mixture on top of each of the muffins.
Bake at 350 degrees for approximately 25 minutes or until a toothpick inserted in the center comes out clean and dry.
Yield: 24 muffins
