Ingredients
Crust
- 1 2/3 cups flour
- 1/2 tsp salt
- 10 Tbs unsalted butter
- 2 egg yolks
- 3 - 4 Tbs water
Filing
- 3 large yellow onions, thickly sliced
- 2 tsp butter
- 1 lb bacon, cooked until crisp and crumbly
- 10 oz pepper Jack cheese, grated
- 6 large eggs
- 3 1/2 cups heavy cream
- 1 tsp salt
- 1/2 tsp cumin
Instructions
Crust: mix together flour and salt. Cut in the butter until mixture resembles tiny peas. Whisk together the egg yolks and water and add to the flour mixture. Mix until the pastry is smooth and holds together in a ball, adding more water if necessary. Refrigerate 20 minutes. Roll out to completely line the bottom and sides of the La Forme Table springform. Refrigerate at least 1 hour. Filing: Preheat oven to 425 degrees F. Saute the onions in the butter until soft; let cool. Sprinkle 1/2 of the cheese on the bottom of crust, top with 1/2 of bacon, 1/2 of onions; repeat. Whisk together eggs, cream, salt and cumin. Pour over layers in springform. Bake at 425 degrees F. for 20 minutes and then reduce heat to 350 degrees F. or until a knife inserted in center comes out clean. Let sit at least ten minutes before serving.
