Ingredients
- 3 cups All purpose flour
- 1.5 cups Course wholemeal flour
- 1 tsp Baking Soda
- 1 tsp salt
- 2 tsp sugar
- 12-16oz. buttermilk
Instructions
Preheat oven to 400 degrees In a large bowl combine flour, wholemeal, baking soda, salt and sugar. use hands to sift ingredients together. Add buttermilk to mixture 1/2 cup at a time. Mixing well between each new addition of buttermilk. (dough should be somewhat sticky, be sure to coat hand with flour.) When dough forms a mound in bowl, turn it out onto a floured surface and knead until all ingredients are well combined. Form one ball and press down on lightly to form a thick disc. approx. 2 inches thick. Cut disc in half with floured knife and transfer to an ungreased, floured baking sheet. make a small x in the center of each loaf to allow steam to escape. Place in oven and bake for 40mins or until loaf sounds hollow when tapped on the bottom. when finished, remove from the oven and wrap in clean tea towel to cool.
