Ingredients
- 1 & 1/2 cups all-purpose flour
- 1 cup sugar
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla
- 3 medium size nectarines, peeled and diced
Instructions
In a large bowl, combine dry ingredients. In medium bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be very thick). Fold in diced nectarines. Fill paper-lined muffin cups two-thirds full. Bake for 25-30 minutes. Cool in pan for 5 minutes, then on wire rack. Makes 1 dozen muffins.
