Mesa Potato Wedges recipe

Temperature: 425 ° F

Ingredients

  • 3 medium  baking potatoes, scrubbed
  • 3/4 cup seasoned stuffing mix or croutons, crushed finely
  • 2 Tablespoons dry taco seasoning mix
  • 1/3 cup butter or margarine, melted

Instructions

Preheat oven to 425 degrees F. Spray a 15 x 10 jelly roll pan with non-stick cooking spray.
Cut each potato into eight equal wedges.
Mix crushed stuffing mix or croutons with taco seasoning mix in a shallow dish.
Dip each potato wedge into melted butter or margarine, then coat with crumb mixture.
Place wedges on jelly roll pan. Pour remaining butter or margarine around wedges.
Bake for 30-40 minutes or until golden brown and fork-tender.
Makes 4-6 servings.
