Ingredients
- 4 cups finely chopped, peeled cooking apples
- 2 cups sugar
- 1 cup vegetable oil
- 2 eggs, well beaten
- 1 tsp. pure vanilla extract
- 3 cups all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 cup chopped pecans
- powdered sugar, optional
Instructions
Preheat oven to 350 degrees. Butter your favorite 12 cup Kaisercast pan and set aside. In a bowl stir together the apples and sugar; let stand for 10 minutes, stirring often to allow mixture to make juice. Add oil, eggs and vanilla to the apples, and stir well. Combine the flour, baking soda, cinnamon, nutmeg and salt; add this to the apple mixture. Stir in the nuts. Pour batter into prepared pan Bake 70 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 15 minutes. Remove cake from pan; cool completely on rack. Dust with powdered sugar before serving. Makes 12 to 16 servings.
