Maple-Nut Loaf Cake with Cocoa-Mocha Frosting recipe

Ingredients

Cake
  • 1/3 cup butter
  • 1/2 cup sugar
  • 1 egg yolk, lightly beaten
  • 1/4 cup maple syrup
  • 1 tsp. vanilla
  • 1-1/2 cups all-purpose flour
  • 1-1.2 tsp baking powder
  • 1/2 cup milk
  • 1  egg white, well beaten
  • 1 cup chopped pecans
Frosting
  • 1-1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 tablespoons  butter, melted
  • 1 teaspoon vanilla
  • 2 - 3 tablespoons hot, strong coffee

Instructions

CAKE
Preheat oven to 350 degrees F.
In large bowl, beat butter and sugar until creamy. Add egg yolk, syrup and vanilla; beat well. Whisk together flour and baking powder. Add flour and milk, alternating, beating after each addition until well mixed. Stir in nuts. Fold in beaten egg white. Turn into sprayed Kaiser Extraordinaire Loaf Pan (4.5 cup). Bake at 350 degrees F until tests done with toothpick, 45 to 60 minutes. Cool in pan on rack 10 minutes. Turn out on rack and cool completely, frost with Cocoa-Mocha Frosting.
FROSTING
Whisk together sugar and cocoa powder. Add melted butter and vanilla; beat until creamy. Add coffee gradually, using enough to get a spreadable consistency.
