Mango Coffee Cake recipe

Ingredients

Cake
  • 1/2 cup unsalted butter, melted and cooled
  • 2 lbs. ripe mangos
  • 2 tablespoons fresh lemon juice
  • 1 1/2 cups all purpose flour, sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 large eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla
Topping
  • 1/2 cup dark brown sugar, packed
  • 1/2 teaspoon gound cinnamon
  • 1/2 teaspoon ground ginger

Instructions

Grease and flour one 9-inch springform pan.
Peel skin from the mangos, then cut into 1/2-inch thick wedge slices. Place in a bowl and toss very gently with the lemon juice. Set aside.
In a bowl resift the flour together with the salt, baking powder and sugar.
In a separate bowl whisk the eggs and milk, then add the melted butter and vanilla.
Gradually add the liquid ingredients to the dry ingredients, stirring just enough to moisten. Do not overmix.
Spread the batter in the prepared pan. Drain liquid from mangos and reserve.
Arrange the mango slices in a spiral design over the batter. Drizzle the reserved liquid over the mangos.
Make the topping by combining the brown sugar, cinnamon and ginger. Stir with a fork and sprinkle over the mangos.
Bake at 375�° about 35 minutes, or until a knife inserted in the center comes out clean. Cool for 15 minutes before releasing from the springform pan.
