Macadamia Chip Muffins recipe

Temperature: 400 ° F

Ingredients

  • 2 cups  all-purpose flour
  • 4 teaspoons  baking powder
  • 1 teaspoon  salt
  • 1 cup  granulated sugar
  • 1/2 cup  sweet butter, melted
  • 2 eggs (extra large)
  • 1 cup  milk
  • 1 cup  macadamia nuts, coarsely chopped
  • 8 ounces  white chocolate chips or pieces

Instructions

Make sure to chop the macadamia nuts-they are very hard to chew otherwise!
Preheat oven to 400 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners.
In a bowl, mix the flour, baking powder, salt, and sugar. Add melted butter, beaten eggs, and milk to the dry ingredients. Stir only enough to moisten. Mix in macadamia nuts and white chocolate chips.
Spoon batter into muffin cups 3/4 full. Bake in a 375 degree oven for approximately 18-20 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and cool for 10 minutes before turning out of pan.
Yield: 18 muffins
