For Cake:
Heat oven to 350 degrees F. Spray a 12-cup Kaiser Bundform pan with butter. Dust bottom and sides of pan with cracker crumbs. In a medium bowl, mix together flour, baking powder, salt, cinnamon, nutmeg and ginger and set aside. In a large mixing bowl, cream butter or margarine. Add granulated sugar, brown sugar and vanilla and beat until well-blended. Add eggs, one at a time, beating well after each addition. Mix in pumpkin. In a measuring cup, mix together milk and maple syrup. To butter mixture, add flour mixture alternately with milk mixture until thoroughly combined. Pour mixture into prepared pan. Bake in 350 degree oven for 1 hour or until a toothpick inserted into center comes out clean. Cool 10 minutes in pan. Remove cake from pan onto wire cooling rack. Cool completely. Serve with Gingered Honey-Walnut Sauce (Recipe follows) spooning over slices of pound cake. If desired, top with whipped cream.
For Gingered Honey-Walnut Sauce:
In a saucepan, melt butter or margarine. Stir in honey and crystallized ginger. Stir over low heat for several minutes until smooth. Remove from heat and stir in walnuts. Makes about 1 1/2 cups.
