Ingredients
Cheesecake
- 2 8 oz packages cream cheese, room temperature
- 3/4 cup granulated sugar
- 2 eggs
- 1/3 cup melted butter, cooled
- 1/2 tsp lemon extract
Crust
- 1 cup graham cracker crumbs
- 5 Tbs melted butter
- 1 Tbs granulated sugar
Instructions
Creamy smooth and lightly lemon flavored, this cheesecake is the perfect size for smaller families. Preheat oven to 350 degrees F. Combine graham cracker crumbs, butter and sugar. Press into bottom and partially up sides of springform pan. Bake in preheated oven 5 minutes. Set aside to cool. Increase oven temperature to 375 degrees F. Beat together cream cheese and sugar until light. Add eggs 1 at a time, beating well after each addition. Mix in butter and lemon extract. Pour mixture into springform pan and bake 15- 20 minutes. Cheesecake will be loose in middle but will firm after chilling. Cool cheesecake in pan on wire rack. Refrigerate overnight. Remove sides of pan and gently slide cake from Kaiser springform base onto serving platter. Cake can be served or garnished with fresh strawberries. Makes 6 - 8 servings.
