Ingredients
- 1 egg, room temperature
- 1/2 cup milk
- 1/2 cup all purpose flour
- 1/4 teaspoon cinnamon
- 1/8 teaspoon baking soda
- 2 Tablespoons butter, melted
- 1/3 cup cinnamon sugar
Instructions
Preheat oven to 400 degrees. Using Cooking spray, grease a Kaiser Bakeware 12 cup mini muffin pan. Whisk egg, then gently whisk in milk into the bowl. In a separate bowl, combine flour, cinnamon and baking soda. Add wet ingredients to the flour. Bring the ingredients down to room temperature. Mix together lightly until there are no more lumps. Divide batter evenly between the 12 muffin tins. Bake in the oven for 20 minutes. DO NOT OPEN OVEN DOOR. The tops should have a light golden color. Remove from oven. Put the cinnamon sugar in a small brown bag. Dip the muffins in the melted butter, then place them one or two at a time into the brown bag, shaking so they are lightly coated with cinnamon sugar. Serve Immediately.
