Francine's Multi-Grain Sweet Potato Muffins recipe

Temperature: 350 ° F

Ingredients

  • 2 cups sweet potatoes, cooked and mashed
  • 1 2/3 cups sugar
  • 2/3 cups vegetable oil
  • 2 tsp. Vanilla extract
  • 4 Large Eggs
  • 2 1/4 cups white whole wheat flour
  • 1/2 cups Grape Nuts cereal
  • 1/4 cup  wheat bran
  • 1/4 cup oat bran
  • 2 tsp. Baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. baking powder
  • 1/2 cup chopped walnuts

Instructions

Preheat oven to 350 degrees.
Mix together sweet potatos, sugar, oil, vanilla and eggs in a large bowl.
In another bowl combine dry ingredients (including walnuts.) Add dry ingredients to wet ingredients and stir to combine.
Pour into muffin tins and bake at 350 for 20-25 minutes or until tops are slightly browned. Cool in pan on wire rack for 5-10 minutes then remove from tins and cool completely on wire rack.
