Extreme Carrot Cake recipe

Temperature: 350 ° F

Ingredients

  • 2 cups all purpose flour
  • 2 tsp  baking powder
  • 1 tsp  baking soda
  • 1/2 tsp  salt
  • 1 tsp each ground cinnoman, nutmeg
  • 1/2 tsp  allspice
  • 4  eggs
  • 1 1/2 cups  white sugar
  • 2 tsp  vanilla
  • 1 1/4 cups vegetable oil
  • 2 cups  peeled carrots (grated)
  • 1  19 oz can of crushed pineapple
  • 3/4 cup  sweetened flaked coconut
  • 1 cup chopped walnuts (optional)

Instructions

Preheat oven to 350 degrees
In a medium sized bowl put all dry ingredients together.
In a large bowl put all wet ingredients together including the coconut and carrots and walnuts.
Add dry ingredients to wet all at once and stir only till everything is combined.
Pour into a Kaiser Bakeware La Forme 13x9x2 greased cake pan.
Bake unitl nicely browned and toothpick inserted comes out nice and clean. (about 50-60 minutes)
