Temperature: 350 ° F
Ingredients
- 2 eggs
- 1 cup sugar
- 1 cup dairy eggnog (not canned)
- 1/2 cup margarine or butter, melted
- 2 teaspoons rum extract
- 1 teaspoon vanilla
- 2 1/4 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Instructions
Heat oven to 350 degrees F. Grease bottom only of 8.5 x 4.5 loaf pan. Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan. Bake for 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. When cooled completely, wrap tightly in plastc wrap or foil and store in refrigerator. Makes 1 loaf, 14 - 16 slices. Serve plain or with margarine or butter. Also wonderful toasted!
