Ingredients
- 5-6 MacIntosh apples (or other baking apples)
- 2 Tablespoons cinnamon
- 5 Tablespoons sugar
- 2 cups sugar
- 3 cups all-purpose flour
- 1 cup oil
- 4 eggs (extra large)
- 1/2 cup cranberry juice
- 3 teaspoon baking powder
- 3 teaspoon vanilla
- 1 teaspoon salt
- 4 ounces whole fresh cranberries
Instructions
These muffins are absolutely delicious cut in half with a big scoop of vanilla ice cream in the middle. Preheat oven to 375degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners. Peel, core, and cut up apples into small pieces. Place apples in a bowl and sprinkle with cinnamon and five tablespoons sugar. Mix in bowl and set aside. In another bowl, mix remaining ingredients until moistened. Spoon batter into muffin pans approximately 1/3 full. Place a tablespoon of the apple mixture into the muffin cup, and then fill the remainder of the muffin cup (almost to top) with additional batter. Bake at 350 degrees for approximately 1 hour or until toothpick inserted into the center comes out clean and dry. Remove from oven and let cool for 10 minutes. Serve warm. Variation: For cranberry apple walnut muffins, mix 3 ounces coarsely chopped walnuts into the batter. Yield: 24 muffins
