Ingredients
- 2 large peaches, peeled and pitted
- water
- 1 teaspoon lemon juice
- 1/2 cup butter
- 1/2 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 cup flour
- 1 teaspoon baking powder
- 2 tablespoons minced candied ginger
- 1/2 cup brown sugar
- 2 teaspoons cinnamon
Instructions
Preheat oven to 350F. Lightly grease a 9" LaForme Leakproof Springform pan. Slice peaches thinly, and place into a bowl with water and lemon juice. In a large bowl, cream butter and sugar; add vanilla. Beat in eggs, one at a time. Add flour and baking powder; mix well. Stir in ginger, and pour batter into pan. Place brown sugar and cinnamon onto a plate. Remove peach slices from water one by one, and roll in cinnamon mixture; repeat until all peaches have been used. Lay slices on their sides over batter, pressing slightly, and forming a decorative pattern. Sprinkle remaining cinnamon sugar over top of cake. Bake for 45 minutes, until a tester comes out clean. Let cool, then remove side of pan. Slice and serve with freshly whipped cream.
