Cinnamon Sugar Peach Cake recipe

Temperature: 350 ° F

Ingredients

  • 2 large peaches, peeled and pitted
  •  water
  • 1 teaspoon lemon juice
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup flour
  • 1 teaspoon baking powder
  • 2 tablespoons minced candied ginger
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon

Instructions

Preheat oven to 350F. Lightly grease a 9" LaForme Leakproof Springform pan.
Slice peaches thinly, and place into a bowl with water and lemon juice.
In a large bowl, cream butter and sugar; add vanilla. Beat in eggs, one at a time. Add flour and baking powder; mix well. Stir in ginger, and pour batter into pan.
Place brown sugar and cinnamon onto a plate. Remove peach slices from water one by one, and roll in cinnamon mixture; repeat until all peaches have been used. Lay slices on their sides over batter, pressing slightly, and forming a decorative pattern. Sprinkle remaining cinnamon sugar over top of cake.
Bake for 45 minutes, until a tester comes out clean. Let cool, then remove side of pan. Slice and serve with freshly whipped cream.
