Chocolate-Orange Mini Bundt Cakes with Orange Glaze recipe

Ingredients

Cake Ingredients
  • 1 3/4 c All Purpose Flour
  • 3/4 c Cocoa
  • 1 1/4 t  Baking Powder
  • 1/3 t Baking Soda
  • 2 Sticks Butter
  • 1 1/3 c Sugar
  • 2 Large Eggs (at room temperature)
  • 1 c Sour Cream
  • 1 T Orange Zest
  • 1/2 c Orange Juice
  • 1/3 c Semi-Sweet Chocolate Chips
  • 1 Cooking Spay
Glaze Ingredients
  • 1 c Florida's Natural Brand Premium Orange Juice
  • 2 c Confectioners Sugar, sifted
  • 1 t Vanilla Extract
  • 1 T Melted Margarine or Butter

Instructions

Cake Instructions:
Preheat Oven to 350 degrees F.
Whisk flour, cocoa, baking powder and baking soda in a medium mixing bowl until well combined. Reserve 1 tablespoon of the mixture. Set both aside.
In a seperate bowl; cream together butter and sugar. Add in eggs one at a time, beating well after each. Add in sour cream, orange zest and orange juice and beat until well combined.
Combine 1/3 of the flour mixture with butter mixture and beat well. Repeat until all ingredients are well combined.
Place the tablespoon reserved flour mixture in a a plastic bag. Add 1/3 cup of the chocolate chips and shake well. Stir chocolate chips into cake mixture.
Coat Kaiser Bakeware mini bundform pan with cooking spray and dust with flour. Spoon the cake mixture into pans.
Bake for approximately 18 minuites.
Glaze Instructions:
Combine all glaze ingredients in small bowl until well mixed. Spoon over cooled cakes.
Recipe Yield: 12 mini bundt cakes
