Ingredients
- 2 cups fresh, pitted tart cherries (frozen will do)
- 2 cups fresh blueberries
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1-1/2 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 8 tablespoons butter or shortening
- 1 egg
- 1/2 cup vanilla soy milk
- 1/2 teaspoon cinnamon
- 1/4 cup brown sugar
Instructions
Preheat oven to 400F. In a large bowl, combine cherries, blueberries, cornstarch, and vanilla; pour into a 9"x9" Noblesse Square Cake Pan, and set aside. In same bowl (why clean another one?), combine flour, baking powder and salt; with a pastry blender or a fork, mix in butter until mixture is in large crumbs. Combine egg and soy milk; pour into flour mixture, and combine well. Drop batter over fruit, and spread as well as you can to cover fruit. Combine cinnamon and brown sugar; sprinkle over topping. Bake for 30 minutes, until top is golden and fruit is bubbling. Serve with good vanilla ice cream, or whipped cream. Enjoy!
