Cherry Blueberry Cobbler recipe

Temperature: 400 ° F

Ingredients

  • 2 cups fresh, pitted tart cherries (frozen will do)
  • 2 cups fresh blueberries
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1-1/2 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 8 tablespoons butter or shortening
  • 1 egg
  • 1/2 cup vanilla soy milk
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar

Instructions

Preheat oven to 400F.
In a large bowl, combine cherries, blueberries, cornstarch, and vanilla; pour into a 9"x9" Noblesse Square Cake Pan, and set aside.
In same bowl (why clean another one?), combine flour, baking powder and salt; with a pastry blender or a fork, mix in butter until mixture is in large crumbs. Combine egg and soy milk; pour into flour mixture, and combine well.
Drop batter over fruit, and spread as well as you can to cover fruit. Combine cinnamon and brown sugar; sprinkle over topping.
Bake for 30 minutes, until top is golden and fruit is bubbling.
Serve with good vanilla ice cream, or whipped cream. Enjoy!
