- 2 1/2 cups flour
- 1 Tbsp. brown sugar
- 2 tsp. baking powder
- 1 1/2 tsp. salt
- 2 Tbsp. poppy seeds
- 8 Tbsp. butter
- 1 cup grated Cheddar or Pepper Jack cheese
- 1 Tbsp. sour cream
- 2 large eggs
- 3/4 cup milk
- 2 Tbsp. oil
Instructions
Preheat oven to 450 F. Butter the Muffin pan. Combine the dry ingredients (including poppy seeds) in a mixing bowl. Cut the butter into 12 pieces, add the dry ingredients, and rub in until the mixture resembles fine meal. Stir in the cheese. In a separate bowl, whisk eggs into the milk, then beat in sour cream and oil. Stir into the dry ingredients to form a soft mixture. Do not overmix. Spoon the batter evenly into the Muffin pan. Bake on the middle grid until golden and just firm for approximately 20-25 minutes.
