Cheese and Poppy Seed Muffins recipe

Ingredients

  • 2 1/2 cups flour
  • 1 Tbsp. brown sugar
  • 2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 2 Tbsp. poppy seeds
  • 8 Tbsp. butter
  • 1 cup grated Cheddar or Pepper Jack cheese
  • 1 Tbsp. sour cream
  • 2 large eggs
  • 3/4 cup milk
  • 2 Tbsp. oil

Instructions

Preheat oven to 450 F. Butter the Muffin pan.
Combine the dry ingredients (including poppy seeds) in a mixing bowl. Cut the butter into 12 pieces, add the dry ingredients, and rub in until the mixture resembles fine meal. Stir in the cheese. In a separate bowl, whisk eggs into the milk, then beat in sour cream and oil. Stir into the dry ingredients to form a soft mixture. Do not overmix.
Spoon the batter evenly into the Muffin pan. Bake on the middle grid until golden and just firm for approximately 20-25 minutes.
