  • 2 LARGE EGGS
  • 1- 8 OUNCE PACKAGE CREAM CHEESE - SOFTENED
  • 1/4 CUP GRANULATED SUGAR
  • 2 TABLESPOONS CORNSTARCH
  • 1/4 CUP RESERVED CHERRY JUICE
  • 1/2 CUP  CHOPPED MACADAMIA NUTS

6PREP TIME: 20 MINUTES
START TO FINISH: 3 HOURS 10 MINUTES
PREHEAT OVEN TO 350 DEGREES
WITH PASTRY BRUSH,COAT SQUARE 9 INCH LE FORME SPRINGFORM WITH A SMALL AMOUNT OF THE MELTED BUTTER.
DRAIN CHERRIES & RESERVE JUICE, COARSELY CHOP & PAT DRY. SET ASIDE
IN MEDIUM BOWL, USE FORK TO MIX TOGETHER, REMAINING BUTTER, COOKIE MIX & 1 EGG.
PRESS TWO-THIRDS OF THE DOUGH INTO THE BOTTOM OF THE PREPARED PAN.
BAKE IN PRE-HEATED OVEN FOR 15 MINUTES.
WHILE DOUGH IS BAKING PREPARE FILING.
IN MEDIUM BOWL, USE ELECTRIC MIXER ON MEDIUM SPEED TO CREAM TOGETHER THE CREAM CHEESE, SUGAR & CORNSTARCH UNTIL SMOOTH & CREAMY, ABOUT 2 MINUTES. NEXT, ON LOW SPEED, MIX IN 1 EGG & CHERRY JUICE. BLEND WELL, UNTIL NO STREAKS REMAIN. BY HAND, STIR IN CHERRIES & NUTS.
EVENLY SPREAD OVER DOUGH IN PAN.
BREAK REMAINING DOUGH INTO SMALL PIECES & COVER FILING AS MUCH AS POSSIBLE. PRESS DOWN GENTLY
BAKE 35 MINUTES OR UNTIL GOLDEN BROWN & FIRM TO THE TOUCH, IN THE CENTER.
CHILL 2 HOURS, THEN CUT INTO 16 BARS.
