- 3 cups bran
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1 1/4 teaspoons baking soda
- 1/4 teaspoon salt
- 1 egg (extra large)
- 1 3/4 cups buttermilk
- 1/4 cup oil
Instructions
A tasty way to meet your dietary fiber needs. Preheat oven to 400 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners. In a bowl of an electric mixer, combine bran, flour, sugar, baking soda, and salt. Add liquid ingredients and mix together briefly (begin at slow speed, then turn to high when ingredients begin to get damp). Beat just enough to moisten dry ingredients. Spoon batter into muffin tins until almost full. Bake at 375 degrees for approximately 20 minutes or until a toothpick inserted into the center comes out clean and dry. Remove from oven and cool for 10 minutes before turning out of pan. Note: Bran may be fine or coarse. You may have to adjust the amount of milk depending on type of bran used. Variation: For Raisin Bran Muffins, add 1/4 cup dark raisins and 1/4 cup light raisins to the basic batter.
