Banana Walnut Loaf recipe

Temperature: 250 ° F

Ingredients

  • 2 medium bananas, very ripe
  • 1 cup sugar
  • 3 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup flour
  • 1/4 cup oil
  • 1/2 cup buttermilk
  • 1/2 cup finely chopped walnuts

Instructions

Preheat oven to 250 degrees F. Generously grease Kaiser 8" mini-loaf pan. Combine bananas, sugar, baking soda, salt and blend on high speed for one minute. Add eggs, one at a time, mixing after each addition. Add flour, oil and buttermilk and mix for two minutes or until smooth and well blended. Stir in walnuts. Pour batter into pan. Bake 1 1/2 to 1 3/4 hours. Cool on rack 10 minutes. Remove loaf from pan and continue cooling on rack.
Will accomodate batter for a small loaf pan recipe or will make 3 loaves from a standard 2- loaf recipe.
