Banana Nut Muffins recipe

Ingredients

  • 1/2 cup  sweet butter, room temperature
  • 1 1/2 cups  granulated sugar
  • 2 cups  mashed bananas (about 4 medium)
  • 2 eggs (extra large)
  • 1/2 cup  buttermilk
  • 1/2 teaspoon  baking soda
  • 2 1/2 cups  cake flour or all-purpose flour
  • 1/2 teaspoon  baking powder
  • 1/4 teaspoon  salt
  • 1/4 cup  chopped walnuts

Instructions

Use up your overripe bananas in this recipe.
Preheat oven to 375 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners.
In the bowl of an electric mixer, combine butter and sugar and beat until thoroughly blended. Add the rest of the ingredients except walnuts to the electric mixer bowl and beat at low until dry ingredients are moistened. Turn to high and beat until smooth. Blend in walnuts by hand.
Spoon batter into muffin pan cups until 2/3 full.
Bake at 350 degrees for 15-17 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and allow to cool in pan for 10 minutes before turning out.
Yield: 24 muffins
