Ingredients
- 1 cup sugar
- 1 egg
- 1/2 cup butter, room temperature
- 1 cup mashed ripe bananas (about 2 medium)
- 3 Tablespoons milk
- 1 cup whole wheat flour
- 1 cup unbleached white flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1 cup chopped walnuts
Instructions
If you like bananas and if you like chocolate, you'll love this yummy combination. Preheat oven to 450 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners. In a mixing bowl, cream sugar, egg, and butter. In a separate bowl, combine mashed bananas and milk. Sift together whole wheat and white flours, baking powder, baking soda, and salt. Stir dry ingredients into the sugar-egg-butter mixture. Add banana mixture and blend until just combined. Fold in chocolate chips and walnuts. Bake at 325 degrees for 15 to 20 minutes or until a toothpick inserted into the center comes out clean and dry. (Note: Don't confuse the melted chocolate with moist muffin. Try to do the toothpick test without hitting a chocolate chip.) Remove from oven and let cool in pan for 10 minutes before turning out. Yield: 12 muffins
