Applesauce-Blueberry Muffins recipe

Temperature: 450 ° F

Ingredients

  • 2 cups  sifted flour
  • 1/2 cup  sugar
  • 1 Tablespoon  baking powder
  • 1/2 teaspoon   salt
  • 1/2 cup  cold sweet butter, cut into small pieces
  • 2 eggs (medium), beaten
  • 1/2 cup  applesauce
  • 1 cup  blueberries, washed, drained, and dried

Instructions

This delicious muffin is the creation of The Little Pie Company of New York.
Preheat oven to 450 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners.
In a mixing bowl, combine flour, sugar, baking powder, and salt.
Add butter, and blend until mixture is grainy in texture.
Add eggs and applesauce to flour mixture and blend until ingredients are damp.
Fold in blueberries.
Pour batter into muffin cups about 2/3 full. Bake at 425 degrees for about 20 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and let cool in pan for 10 minutes before turning out.
Yield: 12 muffins
