Ingredients
Apple Mixture
- 5 or 6 Winesap apples
- 2 Tablespoons cinnamon
- 5 Tablespoons sugar
Cupcake Batter
- 2 cups sugar
- 3 cups all-purpose flour
- 1 cup oil
- 4 eggs (extra large)
- 1/2 cup orange juice
- 3 teaspoons baking powder
- 3 teaspoons vanilla
- 1 teaspoon salt
Instructions
I like the taste of Winesap apples in this recipe, but you can use Cortland or MacIntosh if you wish. Preheat oven to 375 degrees. Prepare your La Forme muffin pan by lightly brushing on a layer of melted butter. Let firm in refrigerator while preparing recipe. Or, line pan with paper liners. Peel, core, and cut up apples into small pieces, and place into a bowl. Sprinkle cinnamon and 5 tablespoons sugar on the apples and stir to mix. Set aside. In a bowl, mix sugar, flour, oil, eggs, orange juice, baking powder, vanilla, and salt, until mixture is smooth. Spoon batter in pans 1/3 way full. Place a tablespoon of the apple mixture on top of the batter, then fill papers almost to the top of the pan with additional batter. Bake at 350 degrees for approximately 45 minutes or until a toothpick inserted into the center comes out clean and dry. These cupcakes can be served hot. To reheat, place in a toaster oven or regular oven for 10 minutes at 300 degrees. Yield: 18 cupcakes
